Dessert Pizza Pie!

My Friend Nic introduced me to You Want Pies With That where they were making Pies that fit the theme of childhood memories. The first thing that came to my mind was Dessert Pizza. As a kid I was not big on dessert, but I loved Dessert Pizza. We made it by using a BIG sugar cookie, then topping it with Whipped Cream & Fresh Fruit.

For my Pie I used a Sugar Cookie Crust, Vanilla Cream Filling, & topped it off with Vanilla Whipped Cream, Mango, Strawberry, & Raspberries.

Dessert Pizza Pie!!!

I decided to make a Dessert Pizza Pie because when I was a kid dessert pizza was my favorite dessert. We’d put whipped cream over a sugar cookie w/ fresh fruit. I decided to adapt this into a pie by using a sugar cookie Pie Crust, then Vanilla Cream Pie topped with vanilla whipped cream & fresh fruit.

Sugar Cookie Pie Crust (thanks to Baking Bites)

 
1/2 cup sugar
1/2 cup butter

1 1/4 cups flour

2 tbsp milk

2 tsp vanilla extract (optional)

Preheat oven to 400F.
In a large bowl, cream together sugar and butter. Mix in flour, milk and vanilla, until mixture is crumbly. Place dough into Pie Tin and press it up the sides (make sure the mixture is even!)

Bake for 20 minutes (Keeping in mind crust will cook more with the pie)

FILLING:

2 cups milk

1/2 cup sugar

1/4 cup corn starch

1/4 teaspoon salt

3 egg yolks

2 teaspoons vanilla

In a medium size sauce pan, add the milk, sugar, corn starch, salt, and egg yokes. Stir ingredients

until blended, and then over medium heat bring this mixture to a boil and cook until thick. Stir while the

mixture is heating to prevent burning on the bottom of the pan. Once the mixture has boiled or

thickened, remove it from the heat and stir in the vanilla. When thoroughly mixed, pour the mixture into

the baked pie crust. Let Cool then add Vanilla Whipped Cream Topping.

Vanilla Whipped Cream

•2 1/2 cups chilled whipping cream

•2 1/2 tablespoons sugar

* 1 teaspoon vanilla extract

Fresh Fruit of your choosing

Mix all ingredients together. After the Pie has cooled, add the Vanilla Whipped Cream on Top. Then

top with fresh fruit of your choosing!

The fresh fruit makes this “pizza” look so fresh and summery!
